The stone itself is extra-thick cordierite, noticeably beefier than the standard 10mm or 15mm stones most people are used to. That means better heat retention and more even distribution. No more hot pockets on one side and sad, pale dough on the other. The perimeter-balanced design keeps things stable too. No wobbling. No stalling. It can even handle a 15-pound cast iron skillet for rotisserie-style cooking with meats, fish, and vegetables.
